Wie Noah mit seiner Arche bewahrt er, was sonst verloren ginge, und ist seit Jahren auf der Suche nach dem verloren gegangenen Geschmack. Die kleinen Wildtomaten behalten nach dem Einlegen Form, Farbe und Biss, als wäre die Ernte gerade vorbei. Was Erich sät, hat Geschmack. Das Paradeiser Chutney köchelt bis zu 8 bis 10 Stunden im Kupferkessel, mit Zucker, Fruchtessig und indischen Gewürzen fein abgeschmeckt. Andere Sorten trocknen über Nacht langsam im Ofen, bis ihr Aroma sich verdichtet.
