Solche Sorten findet man im Handel kaum noch – hier stehen sie im Regal, jede mit eigenem Charakter und eigener Geschichte.\u003c\/p\u003e\n\n\u003ch3\u003eDirektsaft, Muttersaft, Nektar — der Unterschied\u003c\/h3\u003e\n\u003cp\u003eDrei Begriffe stehen auf den Etiketten, und sie meinen Verschiedenes.\u003c\/p\u003e\n\u003cp\u003eEin \u003cstrong\u003eDirektsaft\u003c\/strong\u003e ist der Saft, welcher aus der Presse fließt – gefüllt, wie er ist, ohne Wasserentzug und ohne Rückverdünnung. Ein \u003cstrong\u003eMuttersaft\u003c\/strong\u003e ist die naturtrübe Urform davon, die erste Pressung in voller Kraft, so wie beim Granatapfel. Ein \u003cstrong\u003eNektar\u003c\/strong\u003e dagegen bekommt Wasser und etwas Süße dazu – immer dann, wenn eine Frucht pur zu herb oder zu dickfließend wäre, wie Quitte, Aprikose oder Rhabarber.\u003c\/p\u003e\n\u003cp\u003eAlle vier Säfte dieser Auswahl sind Direktsäfte, drei davon zusätzlich in Bio-Qualität. Wer die samtige Seite sucht, findet sie bei den Nektaren – beides hat seine Stunde, und beides macht van Nahmen mit derselben Sorgfalt.\u003c\/p\u003e\n\n\u003ch3\u003eStreuobstwiese statt Plantage\u003c\/h3\u003e\n\u003cp\u003eDer Unterschied beginnt lange vor der Presse, nämlich auf der Wiese.\u003c\/p\u003e\n\u003cp\u003eHochstämmige Obstbäume tragen weniger als eine moderne Plantage, dafür aromatischer – und zwischen ihnen leben über 5.000 Tier- und Pflanzenarten. Damit sich die Pflege für die Obstbauern lohnt, zahlt van Nahmen seit 1994 gemeinsam mit dem NABU einen Aufpreis für Streuobst. Zweimal im Jahr werden 500 bis 800 junge Bäume nachgepflanzt.\u003c\/p\u003e\n\u003cp\u003eJe später geerntet und je schonender gepresst wird, desto vielschichtiger zeigt sich später das Aroma im Glas. Deshalb wartet die Kelterei ab, presst behutsam und füllt den Saft unverfälscht ab – bei den Kirschen ebenso wie beim Apfel.\u003c\/p\u003e\n\n\u003ch3\u003eJeder Saft zu seiner Stunde\u003c\/h3\u003e\n\u003cp\u003eDiese Säfte gehören ins Stielglas, nicht in den Plastikbecher.\u003c\/p\u003e\n\u003cp\u003eMorgens gehört der Apfelsaft zum Frühstück, im Sommer als Schorle mit sprudelndem Mineralwasser.
