Soft, granular, and roasty—the filling offers three characteristics at once because the same raw ingredient is used in two ways.

The truffle melts, while the pieces of brittle remain and crunch long after there is nothing left to chew. It is rare to find soft and crunchy so well-balanced in a single bite. A portion of clarified butter keeps the filling supple so that it gives way without sticking to your mouth.

Milk chocolate is the right choice for the exterior, as a dark variety would clash with the roasted sugar. Milk chocolate, by contrast, embraces it and carries it through, leaving only the nut behind at the end.

When the sugar melts a second time

Roasted almonds are made in a kettle, where the sugar first crystallizes white on the hot nut and then melts a second time. This exact double process creates the roasted aroma that a caramel cream cannot replicate, as it lacks the nut inside.

The more evenly the almonds are turned in the kettle, the cleaner the sugar remains and the less of a burnt taste there is. One part is then finely ground into the truffle mass, while the other remains coarse as brittle to retain its bite.

A small amount of hazelnut is also in the recipe, adding a second, deeper roasted note beneath the almond aroma. The brittle is the sensitive component; if left exposed, it absorbs moisture and loses its crunch, which is why Sawade wraps each sphere individually in paper and the bag remains sealed.

With mulled wine and on the advent platter

At the Christmas market, a roasted almond comes out of the bag hot and needs to be eaten immediately; here, it waits patiently in the cupboard for its moment. That is the beauty of this sphere: the aroma remains ready even in January.

Alongside a mug of mulled wine, this Sawade variety keeps up effortlessly, and among cinnamon stars and vanilla crescents, it finds its place immediately. When giving a mixed gift, many like to include two of these, as no one needs an introduction to roasted almonds.

There is no alcohol in the recipe, so the bag can be placed on the advent platter without hesitation and enjoyed by the children. Two pieces on a small plate are enough for two people.

The soft caramel seeks the company of milk coffee and has no objections to a glass of cold milk either. At Sawade, fresh butter, cream, premium cocoa, nuts, and marzipan are processed daily for this purpose, and Sawade deliberately avoids the use of palm oil.
