Today, it is still run as a family winery by brothers Volker and Werner Knipser, along with the latter’s son, Stephan Knipser. The winery, also known as Johannishof, which originally operated as a mixed farm including fruit and vegetable cultivation, also features a popular restaurant and wine shop called Halbstück, which we highly recommend visiting during a trip to the Palatinate.

Knipser Winery – the top-tier winery

Since 1993, the Knipser winery in Laumersheim has been a member of the VDP, the Association of German Prädikat Wine Estates. The vineyards extend from the Freinsheimer Höhe in the south to the edge of the neighboring northern village of Dirmstein and boast renowned sites such as Großkarlbacher Burgweg, Laumersheimer Kirschgarten, Laumersheimer Steinbuckel, and Dirmsteiner Mandelpfad.

The 75 hectares of vineyards are planted in small plots with both red and white grape varieties, with Spätburgunder (Pinot Noir) accounting for the lion's share of the red wine and Riesling for the white. The estate wines, such as Pinot Gris, Sauvignon Blanc, or the white wine cuvée of Chardonnay and Pinot Blanc, are all crafted for excellent drinkability. “The wines should be expressive, but not thin. But in a way that makes you want to open a second bottle,” as Volker Knipser puts it.

The wines from calcareous marl grow on limestone, which was formed from deposits of calcareous algae that built reefs in a tropical sea during the Miocene epoch. The calcareous marl wines impress with a cool minerality and light hints of flint, and they already possess good aging potential. However, the Grosses Gewächs category wines, such as the Spätburgunder Kirschgarten, surpass even this level of quality, as do the top cuvée X, made from Bordeaux grape varieties Cabernet Sauvignon, Cabernet Franc, and Merlot, or the Syrah. These wines exhibit fullness and density, complexity and great structure, possessing a body with a touch of “bacon” while remaining elegant and multi-layered. They require time, and the Knipsers grant them exactly that, as they are only released to the market after a few years of bottle aging.

Knipser Winery price list: with us, you can buy Knipser wines at ex-cellar prices.

Chardonnay & Pinot Blanc – Estate Wine from Weingut Knipser

The 2025 Knipser Chardonnay & Pinot Blanc from the Knipser estate in Laumersheim in the Palatinate is a refined, dry VDP estate wine and one of the most popular Knipser wines. Its name dates back to a small chapel. The Catholic chapel "Zum heiligen Kreuz" (Holy Cross), also known as the Palm Chapel, commemorates the vanished village of Berghaselbach, which once stood on this site and was abandoned around 1733, thereby disappearing from the map.

The soils here consist mainly of sand and gravelly rock, deposited by the Rhine over thousands of years. On this soil, which warms up quickly, early-accessible, drinkable wines with distinct primary fruit are produced. The selective hand-harvesting of the Riesling grapes in autumn usually takes place in several passes to ensure optimally ripe fruit is collected. At the winery, all grapes are destemmed, meaning they are separated from the stems. The resulting mash is gently pressed in a tank press. Fermentation takes place under temperature control at below 20°C in stainless steel tanks, which preserves both the fruitiness and the varietal character. The wine has light roasted aromas on the palate, an intense color, and is quite robust. This is due in part to its grape varieties: Cabernet and Dornfelder, with the Dornfelder deliberately kept in the background, and in part to the bleeding of the must (saignée)—meaning that a portion of the Gaudenz, specifically the clear juice that runs off first, is used for the Rosé Clarette.

On the nose, the Gaudenz reveals fine notes of cassis; on the palate, it is juicy and only slightly influenced by the 18 months spent in used French oak barriques. This limestone originated from deposits of calcareous algae that formed reefs in a tropical sea during the Miocene; it is found in the subsoil of the Großkarlbach Burgweg, Laumersheim Kirschgarten, Laumersheim Steinbuckel, and Dirmstein Mandelpfad sites. This is followed by classic maceration, which takes several weeks, before the wine is gently pressed in a tank press and, after a short settling period during which the heavy lees separate, transferred to wooden barrels. Here, malolactic fermentation takes place, converting malic acid into milder lactic acid, which gives the wine softness and a pleasant mouthfeel. Basic-tier qualities mature in older barrique barrels. Top-tier qualities are matured either entirely or partially in new barriques, depending on the grape variety. For Spätburgunder, 30% - 50% new barrels are used, while for Dornfelder or Cabernet, up to 100% new barrels are used. Storage time in wood ranges between 12 and 30 months.
