Here, the vines have to fight for water and minerals and root deep into the Steinacker. Canopy management is also important for the quality of the wine: double shoots are manually removed, and depending on the weather, the grapes are defoliated and thinned to ensure good ventilation. Each grape variety is hand-harvested at the optimal time, fermented, pressed, and aged separately, and only blended shortly before bottling. The grapes for the Rings Kalk und Stein are hand-picked and selected at the optimal harvest time, and partly pressed as whole clusters. After a short maceration period, natural yeasts are allowed to work and initiate spontaneous fermentation. The wine is aged for 15 months on its full lees in large oak barrels, which Andreas and Steffen master exceptionally well.
