Moutarde aux Cornichons – Mustard with Gherkins by Martin-Pouret

The Moutarde aux Cornichons is a mustard with gherkins from Martin-Pouret in Orléans, France. This tasty mustard is produced entirely in keeping with the traditions of the mustard manufacturer. French mustard seeds from the Loire Valley are ground in a stone mill and blended with salt from Guérande, a little turmeric for color, and homemade Orléans vinegar to create this wonderfully creamy Moutarde d'Orléans, then seasoned with finely chopped gherkins. But before this mustard can release its full flavor, it must first mature. This is how Martin-Pouret produces mustard, just as it was made hundreds of years ago.

When ground and mashed with water and vinegar, the nutty, yellow and brown mustard seeds develop the typical mustard oils that tickle our noses and give mustard its special flavor. The mustard with gherkins is a French mustard specialty from Martin-Pouret. It combines the best mustard made with Orléans vinegar and crunchy sweet-and-sour pickled gherkins.

French mustard is a versatile seasoning paste; mustard with gherkins pairs well with hearty dishes, game or poultry pâtés, cooked ham, and cold cut or cheese platters. You can use it wherever you would use remoulade: in potato salad, with meatballs, with roasted potatoes, with head cheese, in beef tartare, as a hot dog or sandwich spread. Here in a 200g jar.

French Mustard with Gherkins – Moutarde aux Cornichons

Once, the city of Orléans was the stronghold of vinegar production in France; even the king recognized the special quality of Orléans vinegar in a decree in 1590, but of the 300 vinegar manufacturers, only one remains: Maison Martin Pouret. Since 1797, they have been traditionally producing high-quality vinegar, which is still allowed to mature in wooden barrels. In addition to vinegar, the company also produces pickled preserves, such as gherkins pickled in vinegar, and Moutarde, French mustard.

Besides the quality of the mustard seeds, the quality of the vinegar is crucial for the taste of the mustard. It's no wonder, then, that Moutarde aux Cornichons, the mustard with gherkins from Martin-Pouret, tastes so wonderfully good.

The unmistakable character and the unique, full-bodied taste of Orléans mustard are based on a traditional recipe handed down from the 18th century, over 200 years of proven expertise of the Maître Vinaigrier, the selection of the best ingredients, and the commitment of the new owners David Matheron and Paul-Olivier Claudepierre, who took over the vinegar house in 2019 and proudly look back on a unique heritage, the tradition of the great vinegar masters, which they are now allowed to continue.

Martin-Pouret
