Frying with cast iron
You have chosen a Le Creuset cast iron skillet. It certainly takes some time to get used to a cast iron skillet if you are coming from a coated aluminium or stainless steel pan, as it has different frying properties. It takes longer to heat up, but then retains heat for longer, fries more evenly, and the pan develops (and this is important) a patina. Initially, these appear as dull, greyish spots, usually starting in the centre of the pan, until the base of the pan is covered with them and then the many small spots merge into one large patch. This is completely normal behaviour for a cast iron skillet. Please do not try to wipe off or otherwise remove the patina. The more patina there is, the better the skillet fries, as the patina acts as a kind of natural non-stick coating. When properly seasoned, the skillet will last for generations. When frying with cast iron skillets, it is important to always place them on the stove with a good oil; medium heat is sufficient. To clean, it is usually enough to wipe out the pan with a kitchen towel; residues can be removed with hot water.
