Vintage sardines in olive oil in the red tin

The vintage sardines in olive oil from La Quiberonnaise are the classic from the red tin, Breton Atlantic sardines in extra virgin olive oil, Millésime 2025. Not a mass-produced fish, but a vintage that matures in oil like a fine wine.

Vintage sardines in olive oil are four to six Breton Atlantic sardines from the Conserverie La Quiberonnaise, preserved in extra virgin olive oil, Millésime 2025. Along with the yellow tin containing peanut oil, the red tin is the brand's signature and features a historic view of the port of Quiberon. A classic that one should always have in the pantry, and it is not without reason that La Quiberonnaise is considered one of France's most renowned sardine producers.

In the oil, the sardines lie silvery and neatly arranged, close together. On bread, they are tender and oily-mild, with the refined, slightly nutty tone of a good olive oil and the salty clarity of the Atlantic. Not an intrusive fish, but a calm, rounded flavor that manages without sharpness or loud seasoning. Anyone who has previously only known cheap canned sardines will immediately taste the difference: here, the sardine remains whole and firm in the oil, instead of disintegrating into mush. This is how the classic tastes.

Tender, mild, with fine olive oil

Sardines in olive oil are the entry into the world of vintage sardines: mild, uncomplicated, always good.

The extra virgin olive oil envelops the fish, keeps it juicy, and gives it a velvety tenderness during the aging process. The vintage is only offered for sale after a year in the tin, by which time the flesh is well-infused. The longer the tin sits afterward, the finer the sardine becomes, just like with wine. For those looking for a nutty counterpart, choose the yellow tin with peanut oil, the house's second classic.

So simple, so good on bread

These sardines need almost no accompaniment: good bread, a little butter, a few drops of lemon, done.

Their classic place is on a slice of sourdough bread with a spread of salted Bordier butter, paired with a glass of dry white wine or a cool beer. They are just as lovely divided on a salad with tomatoes and onions, in pasta with lemon and parsley, or briefly warmed on toasted bread so that the olive oil seeps warm into the bread. As part of a tapas platter with olives, bread, and cheese, they quickly become the secret star. And when a small hunger strikes, they taste just as good straight out of the tin.

The red classic from Quiberon since 1921

The Conserverie La Quiberonnaise was founded in 1921 by Henriette Jourdan in the fishing port of the Quiberon peninsula. Today, her grandchildren Bernard and Thierry run the family business in the third generation, with the same care as their grandmother.

The path to the tin is purely manual work: the fresh-caught fish is cleaned, salted overnight, dried, fried, stripped of head and tail, and finally placed in olive oil. Within 48 hours of being caught, it is in the tin, without any deep-freezing. Only a few canneries in Brittany still work by hand in this way. In 2015, the company received the Entreprise du Patrimoine Vivant label for this expertise. You can find the red tin with us alongside many other specialties from La Quiberonnaise.

Those with patience let them age for years

The 115-gram tin belongs on a cool, dark shelf; flip it over once every six months so the oil permeates the fish evenly. Those with patience let them age for one to two years; when stored well, vintage sardines can last for several years. Let them reach room temperature briefly before opening; then the olive oil tastes at its roundest and the fish at its most tender.
