The Malpighi Aceto Balsamico di Modena IGP Invecchiato is a high-quality balsamic vinegar made from cooked grape must from dried grapes and aged wine vinegar. This unique balsamic vinegar is aged for at least three years in old oak barrels, which gives it its characteristic density (1.34) and its full-bodied, balanced taste. It contains no additives such as caramel or colorants, thus remaining a 100% natural product.

Application possibilities

Whether on a risotto with zucchini flowers or scallops, fish carpaccio and beef tartare, with fresh berries or pears, or in combination with a ripe Parmigiano Reggiano – this balsamic vinegar refines every dish and gives it that certain something.

Production and aging

The balsamic vinegar is produced according to traditional methods, with the grape must coming from late-harvested grapes that are first dried. As with Appassimento wine, the ripe grapes are laid out on special racks with straw mats after harvesting so that they are well ventilated and dried directly outdoors for several months. The grapes thus lose some water, and the sugar content and aromas become concentrated. The dried grapes are pressed, and the concentrated must is traditionally cooked.

Afterward, the Aceto undergoes a long aging process in oak barrels, which intensifies the sweetness and ensures a velvety texture and a deep, complex flavor with a delicate woody note.
