Puro Condimento Bianco by Alico, bright and balanced

Puro Condimento Bianco di Modena is a white balsamic vinegar – a bright vinegar seasoning from the Alico family manufactory in Sorbara near Modena. Matured in small wooden barrels, balanced in its interplay of sweetness and acidity. A light-footed alternative to dark aceto — available from us in 250ml and the new 500ml bottles.

Puro Condimento Bianco di Modena is a white balsamic vinegar from Acetaia Alico in Sorbara, matured in small wooden barrels and therefore bearing the Italian designation "Invecchiato in Barriques". Made from concentrated white grape must and fine wine vinegar, with 4% acidity and a density of 1.25, completely free of caramel coloring. A bright seasoning for light cuisine.

The Puro Condimento Bianco is bright, fruity, and balanced. Upon opening the bottle, a mature aroma of white grapes rises, and on the palate, it carries a subtle sweetness, supported by fine acidity and never overpowering. A seasoning that does not aim to replace dark aceto — but to complement it where color and aroma should remain light.

Light in color, clear in statement

From the bottle, the Puro Bianco flows in bright straw gold, clear and shiny, with a scent of white grapes and a subtle hint of quince.

The aroma shows the ripeness of the white grape must – a hint of ripe pear, a delicate background of apple, underneath the subtle wood note from barrel aging. On the palate, the Puro Bianco exhibits its balanced sweetness, its density giving it a fine syrupy consistency.

Without caramel coloring, it shows its true face – bright, honest, transparent. What distinguishes it from classic dark aceto is precisely this restrained character: it doesn't push itself into the foreground; it supports. You can dose it like a good wine vinegar, but with more depth and balsamic soul.

We like it with leafy salads and seafood

Light cuisine calls for Puro Bianco – a few drops over colorful leafy salads, over steamed fish, over fresh seafood.

It is particularly lovely with poultry and light meats: with veal, chicken breast or rosé-roasted duck breast, it adds a fruity edge that is free of heavy sweetness. With fresh vegetables such as young asparagus, thin beans or zucchini, it sets a bright accent where dark aceto would swallow the natural flavor. Try it also over raw fish carpaccio with a few drops of good olive oil and a pinch of coarse sea salt.

It is especially fine in vinaigrettes. Three parts olive oil to one part Puro Bianco, a touch of Dijon mustard, a pinch of salt – a good leafy salad needs no more. It is also a reliable companion for grilled dishes from the oven or off the fire, where you want to maintain a light, summery freshness.

Alico from Sorbara, since the late 80s

Alico is a family-run Acetaia from Sorbara near Bomporto, in the heartland of Aceto Balsamico di Modena. Founded in the late 1980s to combine family tradition, expertise, and passion for balsamic vinegar under one roof.

The manufactory works in small batches, far from industrial mass production, and belongs to the Consorzio Tutela Aceto Balsamico di Modena IGP. The PURO line is Alico's own creation beyond the classic IGP requirements — seasonings that come in three profiles: dark, white, and rosé. The white balsamic bears the designation "Invecchiato in Barriques" and matures in small wooden barrels until sweetness and acidity are in balance.

Today, Alico offers over twenty balsamic products, from dark IGP balsamic to creams and more mature vintages — those who want to delve deeper will find the full range in the Alico assortment. All credit to a company that continues classic craftsmanship with a clear vision.

Enjoyment Tip

Our tip: Store the Puro Bianco in a cool, dark place at 10 to 15 degrees Celsius to preserve its bright fruitiness for many months. Three to five drops are enough — over leafy salad with goat cheese, over steamed fish, over pan-fried chicken breast with fresh herbs. An opened bottle will keep sealed for up to twelve months, whether you choose the 250ml or 500ml version.
