White truffle praline with roasted hazelnut pieces

Tartufo Dolce Bianco are white truffle pralines from Tastelanghe in Piedmont. A blend of white chocolate and 31% ground hazelnuts from their own family orchards, studded with pieces of roasted nuts, hand-shaped and individually wrapped. 110 grams.

Tartufo Dolce Bianco are white truffle pralines from Piedmont. At Tastelanghe, a mixture of white chocolate and 31% ground Piedmont hazelnuts is created, complemented by pieces of roasted nuts and a pinch of salt. Each praline is rolled by hand into its signature truffle shape.

Creamy white, with a crunch

The white chocolate melts softly on the tongue, then the hazelnut pieces follow – crunchy, roasted, and full-bodied. The sweetness of the couverture and the nuttiness keep each other in check, while a pinch of salt ensures it doesn't taste too one-dimensional.

Of the three Tartufi, this is the most accessible. Even if you usually find white chocolate too sweet, you should still give it a try – the high nut content completely changes the profile.

Visually, it is also the most striking: a pale ivory, with dark nut pieces like specks. On a serving plate, it is a real eye-catcher.

Almost a third hazelnut

Thirty-one percent of the praline consists of hazelnut, both ground and in pieces. In white chocolate, which lacks cocoa mass, the nut provides almost the entire flavor.

This is why this Tartufo works, while many other white pralines fall short. Without the nut, only sugar and milk fat would remain; with it, a flavor profile is created that truly stands the test.

The nuts are grown in Somano in the Alta Langa, on 40 hectares owned by the Quazzo family. The groves have stood there since 1891, and since 2018, Alberto Quazzo has been processing the harvest himself under the name Tastelanghe.

A mushroom-shaped praline

Alba, twenty kilometers to the north, is the capital of the white truffle. Every autumn, the city fills with traders, chefs, and curious visitors, and the prices for a few grams of the tuber reach levels that one would rather not calculate.

Piedmontese confectioners have created a sweet companion to the tuber: the Tartufo Dolce, round and slightly irregular like its namesake from the forest floor. The allusion is especially fitting for the Bianco, as the Alba truffle is indeed the white one.

Each praline is individually wrapped and packaged in a box, making them a lovely gift.

Three Tartufi, three directions

The Tartufi come in three varieties, all with the same 31% nut content and all hand-shaped. The Nero is the intense one, the Caramello is the sweet-and-salty one, and this one is the mild one.

They work very well together in a selection: there is something for every taste, and comparing them is half the fun. If you are giving them as a gift, it is best to take all three.

Store them in a cool, dry place, but not in the refrigerator. Sealed, they will last for several months; opened, they disappear much faster – not because of their shelf life, but because of those who will want to share them with you.

Coarsely crumbled over panna cotta or mascarpone cream, they add nuttiness and crunch to a simple dessert without having to cook anything.

They don't taste as good when chilled

Tartufo Dolce Bianco is the perfect accompaniment to an afternoon cappuccino or a glass of Moscato d'Asti – the floral sparkling wine and white chocolate are a classic pairing.

Serve at room temperature; they don't taste half as good when chilled. They also pair well with fresh raspberries or strawberries, where the acidity of the fruit balances the sweetness.

In our shop, you can find further specialties from Tastelanghe made with the same hazelnuts – the Tartufo Dolce Caramello with its salty note, the hazelnut cream with milk chocolate as a spread, or other pralines and truffles from our range.
