Organic pre-cooked white beans

Maison Ederki's organic white beans are pre-cooked in a jar, offering a creamy texture and a mild, nutty flavor. Tender, firm, and ready to use. No overnight soaking, no hours of cooking – just open the jar, drain, and serve.

Organic white beans by Maison Ederki are pre-cooked in a jar from the Basque gourmet producer in Mouguerre near Bayonne. Cream-colored, mild, and slightly nutty, they come from certified organic farming and are ready to use straight from the jar – for soups, stews, salads, and purées.

When you open the jar, the beans are plump and bright in their clear brine. Gently cooked, they are mealy yet hold their shape without falling apart. The taste is mild and nutty, pleasant and unobtrusive enough to adapt to any cuisine, from Mediterranean dishes to hearty home-style cooking.

Mild, nutty, creamy and tender

Pre-cooked and gently prepared, these white beans are tender and creamy, yet retain their shape.

When heated, the beans become mealy and soft at the core without disintegrating – exactly the texture that gives a good soup its body and anchors a stew. Nutty, creamy, hearty: the white bean is the unsung hero of rustic cuisine.

From Tuscany to the Basque Country, they are part of countless classics, from ribollita to cassoulet. Because they are already cooked, you save yourself the trouble of soaking overnight and long cooking times. Open, drain, and you're ready – keeping a supply on hand saves many an evening meal. It’s how you get a dinner that tastes like it took all day to prepare in just a few minutes.

From soup to salad

Whether a warming soup, a hearty stew, a fresh salad, or a creamy purée – these organic beans are versatile.

A Basque vegetable soup, a chorizo stew, or a white bean purée with olive oil and garlic bring out their savory side. In a lukewarm salad with red onions and parsley, they add substance, and they are a classic side dish for braised lamb or duck.

Whether served warm or cold, the white bean excels in both worlds. In summer as a lukewarm salad, in winter as a rich stew – they adapt to the season. They are a grateful base for cassoulet, gratin, or a quick bean skillet with tomato and herbs. Add a spoonful of cumin or a sprig of rosemary, and you have a dish with character.

If you like, you can pair them with organic chickpeas from the same producer. You can find more canned goods and preserves right next door.

Quality organic products from the Basque Country

Maison Ederki has stood for Basque quality since 1942—for over 80 years—and alongside their classics, they maintain their own organic line.

In Mouguerre, a village on the Adour river near Bayonne, about 18 people carefully prepare high-quality ingredients for the jar. The beans come from certified organic farms and are packed only with water to preserve their delicate, nutty flavor. This ensures every bean tastes almost as good as fresh from the pot.

Having a jar in the cupboard is gold when things need to be quick but still taste good. You can find the entire Maison Ederki range right next door.
