Il Denso & Il Denso Bianco Gift Set, a Balsamic Duo from Modena

The Il Denso & Il Denso Bianco gift set from Acetaia Mussini brings together the award-winning Aceto Balsamico di Modena IGP and the light Condimento Balsamico Bianco in a gift box: two 250 ml bottles, each with five medals. This is no off-the-shelf set, but two bottles that complement each other on the plate.

The Il Denso & Il Denso Bianco gift set is a balsamic gift set from Acetaia Mussini in Magreta near Modena: the dark Il Denso, runner-up in the Feinschmecker test in both 2021 and 2023, and the new Il Denso Bianco, which translates the syrupy density of the original into a clear, amber-colored bottle. "Il denso" means "the dense one," and that is exactly what both are, with ratings of 1.35 and 1.32 on the density scale. Together, they cover the entire plate, from risotto to strawberries.

Plum and vanilla, followed by fresh light must

Il Denso smells of ripe plum, vanilla, and fine wood, while Il Denso Bianco smells of fresh, light grape must with a hint of sweetness.

On the palate, the dark Il Denso is syrupy, dense, and balanced in its sweet-and-sour profile, with caramel and berry notes in the long finish; the 6 percent acidity keeps it lively. The Bianco remains more subtle: a Condimento Bianco with 4 percent acidity, velvety, creamy, and delicate in the mouth, bittersweet, as Mussini describes it, and so light that it does not discolor anything it touches. One makes an impression, the other leaves space.

Dark for mushroom risotto, light for fish

Use Il Denso drop by drop over mushroom risotto, aged Parmesan, and grilled beef; use the Bianco over fish, shrimp, carpaccio, and light salads. The rule behind it is simple: everywhere a dish can handle depth and color, the dark Il Denso belongs, and everywhere the visual should remain light, the Bianco is the choice. An asparagus salad likes the Bianco with good olive oil, while a piece of Parmesan likes the dark one pure. We love both on ripe strawberries—first one bottle, then the other, and then the debate over which was better. Try the dark one on a piece of Sacher torte.

For gourmets and home cooks, this set is a gift that answers the question that always arises at the stove: Which balsamic for the salad, which for the meat? The mustard-yellow box with the Mussini Acetaia 1909 lettering needs no wrapping paper. You can find more ideas in our gift sets.

Five medals and Nonna Cesira’s barrels

Acetaia Mussini has been boiling down grape must into balsamic vinegar in Magreta near Modena since 1909, today under cousins Giorgio and Gabriele Mussini, who re-founded the company in 2001.

The first barrels were bought by patriarch Guido Mussini in 1909. During the Second World War, the family buried them in the ground so they would not fall victim to bombs or confiscation, and family legend has it that Nonna Cesira placed a glowing stone from the Secchia river on a barrel, and the vinegar has matured more beautifully ever since. In the house of Mussini, five medals on the label stand for the highest level of density. The longer the must rests in oak, chestnut, and cherry wood, the denser and deeper it becomes.

The Feinschmecker magazine placed the Il Denso in second place in its balsamic vinegar test in 2021 and 2023, the latter out of 33 dark balsamic vinegars from Modena: "Wonderfully thick, the ten-year-old vinegar melts on the tongue. Caramel and roasted notes, berries, complex and multi-layered." The Bianco is the 2026 novelty from the same house. "Not the biggest, but the best," as Giorgio and Gabriele write on the cover of their catalog. We wouldn't disagree.

Only at the end, drop by drop, never heated

Both bottles should be used raw and only at the very end over the finished dish to ensure the density and aroma are preserved; when heated, a dense balsamic loses exactly what you bought it for. Kept cool, dark, and tightly sealed, both will last a long time, even after being opened, without refrigeration. If you are only looking for one bottle, you can find Il Denso individually and a slightly lighter white balsamic, the Emozione Bianco, in our shop; find everything else at Acetaia Mussini.
