First, the dark chocolate melts on your tongue, then the figure snaps, and the speculoos spices come through: cinnamon, nutmeg, and a warm sweetness. It is this exact sequence that makes it so appealing—first soft, then crunchy.

The 30% dark chocolate takes the edge off the cane sugar and adds a fine tartness. This turns the crunchy buckwheat speculoos into a treat balancing sweet and tart that lingers long on the palate. The dough remains the same: buckwheat flour instead of wheat, plus cane sugar, butter, egg, and the Belgian spice blend of cinnamon, cloves, and nutmeg. Each figure is baked and then coated with 30% dark chocolate made from cocoa mass, cocoa butter, and a hint of vanilla.

It is real chocolate, not a compound coating, and you can taste that with the very first snap. The pastry remains gluten-free from start to finish, completely without wheat or spelt. Behind Generous are Christophe Harou and his wife Théodora, who began baking gluten-free pastries that actually taste like something in 2013.

Good taste must not be hindered by wheat, is how Christophe explains the idea behind the brand. Together with Brussels-based bakers Jean-Benoît and Aurélie Ghenne, the team bakes in Tubize using organic ingredients and Belgian patience.

What began as a small venture in 2013 is today a whole family of gluten-free varieties with their own names and shapes. The chocolate speculoos is the wintry, chocolatey side of the range—a Santa that restores a place at the Advent table for people with celiac disease, too. Generosity you can taste.

Santa figures for the Advent season

The box contains 140 g, enough for several coffee breaks during Advent. The figures are especially nice served with an espresso, for Saint Nicholas Day on December 6th, or as a wintry gift.
