Pacchetelle – Piennolo del Vesuvio Tomatoes – by Italianavera

Italianavera's Pacchetelle are intensely red, unpeeled tomato fillets of the Pomodorino del Piennolo del Vesuvio DOP variety. The Piennolo del Vesuvio tomato is traditionally grown in Campania in the shadow of Mount Vesuvius. This tomato, which grows in large clusters with small, pointed fruits, owes its name to the way it is stored: hanging in clusters, or "piénnolo" in translation. The land of Vesuvius is known for its mineral-rich, fertile volcanic soil, which gives these prolific tomatoes a unique, original flavor: sweet and with very firm flesh.

The Pacchetelle are preserved using an ancient method that has been used by the people of Vesuvius for centuries to preserve the cherry tomatoes, harvested between July and August, throughout the year. The fruits were divided into clusters and left to dry or halved lengthwise and pasteurized in a bain-marie. Italianavera maintains this ancient tradition and produces the Pacchetelle as they were made in the past. This perfectly preserves the aromas and gives your dishes expression, character, and a true tomato flavor.

The Pacchetelle are almost too good to use for cooking sauces or soups; they are wonderful as antipasti with cheese or cold cuts, or as a vegetable side dish. With Piennolo tomato Pacchetelle, you can prepare an excellent dish of spaghetti alla chitarra with clams or even enjoy them raw on toasted bread as a delicious bruschetta.

Pacchetelle – Piennolo Tomatoes in a Jar

The tomatoes for Italianavera are grown in a traditional way in their respective regions of origin, where their biodiversity, organoleptic properties, and the taste of each one are palpable. San Marzano, Vesuvius, Monti Lattari, Piana del Sele are some of the geographical areas where these tomatoes grow.

These are processed fresh from the harvest in a traditional way, preserved in their own juice or in brine, like these red cherry tomatoes of the Piennolo del Vesuvio variety. They reveal their aroma when you open the jar and use the tomatoes to prepare your favorite tomato dish.

The selection of the tomato before harvest, the care in the production process, and the respect for the raw material at every stage of the supply chain are the key points of this production, which is the result of knowledge and passion inherited by the founder Diana from her grandfather and father. Pomodoro vera!

In San Marzano Sul Sarno, not far from Naples, between the lightness of the Amalfi Coast to the west and the energetic volcano Vesuvius, is not only the home of the very best tomatoes, but also of Italy's most attractive sauce maker: Diana Attianese. As a child, she learned everything there is to know about tomatoes from her mother and aunt, who would preserve freshly picked, ripe tomatoes into sauce in the early, cooler morning hours of summer: how the different varieties taste, how they smell when ripe, which tomatoes are best for sauces, which are peeled and preserved whole. Because even if the old varieties are not suitable for transport due to their sensitivity, they can be wonderfully preserved in glass and can without losing their fresh taste and intense aroma.
