Passata di Pomodoro Giallo – Yellow Tomatoes by Italianavera

Passata di Pomodoro Giallo from Italianavera are strained yellow tomatoes in a can. The tomatoes come from the Sele Plain (Piana del Sele) in the province of Salerno. These yellow tomatoes are characterized by their elongated pear shape and intense yellow color, which are as characteristic of this tomato variety as their low acidity and natural sweetness. In this tomato purée, the thick liquid produced by cooking and straining tomatoes, the flavors have also been perfectly preserved, giving your dishes expression and character and true tomato aroma.

The yellow Passata di Pomodoro is wonderful as a sauce for pasta or fish or as a base for a tomato soup.

Passata di Pomodoro Giallo – Yellow Tomato Purée

In San Marzano Sul Sarno, not far from Naples, between the lightness of the Amalfi Coast in the west and the energetic volcano Vesuvius, is not only the home of the very best tomatoes, but also that of Italy's probably most attractive sauce maker: Diana Attianese. As a child, she learned everything there is to know about tomatoes from her mother and aunt, who in the early, cooler morning hours of summer would cook down freshly picked, ripe tomatoes into sauce: how the different varieties taste, how they smell when ripe, which tomatoes are best suited for sauces, and which are cooked whole, peeled. Even if the old varieties are not suitable for transport due to their sensitivity, they can be wonderfully preserved in glass and cans without losing their fresh taste and intense aroma.

Diana knew the canning business well, because her father worked in this industry, but as is often the case with daughters, they want to do things differently, better than their fathers. Only the best tomatoes are cooked down into sauce or put into the pop-art cans of the business graduate. And because the art of preserving is traditionally a women's craft, the name Italianavera suits the lively Italian woman and her ten female employees particularly well.
