Original Ultner Brot – Traditional South Tyrolean Organic Bread
The Original Ultner Brot is a traditional South Tyrolean bread specialty, very similar to the Vinschgerl Paarl. The Vinschgerl Paarl are two flatbreads baked together from the Vinschgau Valley, which is why they are also called Vinschgauer. The Original Ultner Brot is also a flatbread, which can serve as a good snack for a hike. For generations, the Original Ultner Brot has been artisanally baked in St. Walburg in the Ultental valley, using the best ingredients such as homegrown natural sourdough, organic wholemeal flour from their own mill, natural rock salt, and spring water from the South Tyrolean mountains.
The Original Ultner Brot has a rich flavor and is a true South Tyrolean classic, indispensable for a Marende, a traditional snack. The aromatic rye loaves taste particularly good with South Tyrolean speck, Kaminwurzen (smoked sausages), or venison salami and a glass of South Tyrolean wine, but also with delicious fruit spreads and herbal teas from the Dolomites. The organic rye breads accompany breakfast, as well as a Jause, a Vesper, or an Abendbrot (supper).

The Traditional South Tyrolean Bakery
The love for baking and thus for good bread is a family affair for South Tyrol's No. 1 organic baker. The traditional bakery was founded in 1919 by Maria Pircher-Schwienbacher in St. Walburg in South Tyrol and has been an organic bakery since 1982. For master bakers Hannes and his father Richard Schwienbacher, baking is a holistic process: the best organic ingredients from regional cultivation, traditional artisanal processing, long resting times, and baking in a stone oven are prerequisites for the best bread. Because when it comes to the quality and unique taste of their baked goods, the two make no compromises.
Due to the altitude and the associated cool microclimate, almost exclusively rye thrives in the fields of the Ultental valley. Thus, traditional breads in this area usually consist of 100% rye flour. The breads served as provisions, for example, for shepherds and farmers who worked on the alpine pastures during the summer. The nutritious breads could be eaten fresh or dried.
Original Ultner – 100% Organic Rye Bread
The Original Ultner Brot is a small 220g bread made from 100% rye flour type 997 and natural sourdough, seasoned with classic South Tyrolean bread spice (fenugreek), as well as caraway and fennel. Two of the artisanally produced, stone-oven-baked breads are included in a 440g pack.
