The Pfeffersack & Soehne Szechuan Pepper in a black ceramic jar is a dried, whole pepper from the mountainous interior of China with a unique citrus-like aroma.

Pfeffersack & Soehne's Szechuan pepper adds a special touch to both meat stews and roasted vegetables and is an integral part of Five Spices in China. Due to its origin, it is primarily used in Asian dishes.

Characteristic of Szechuan pepper is its tingling, then numbing pungency on the tongue. Its relation to citrus plants adds a pleasant, fresh, lemony aroma. If you want to temper the pungency, you should briefly toast the pepper in a pan and then crush it with a mortar and pestle.

Szechuan Pepper – Origin of the Pepper

Szechuan pepper, also known as flower, mountain, or Chinese pepper, is not botanically a pepper at all. It consists of the dried fruit husks of Zanthoxylum piperitum, freed from their seeds. This spiny rue shrub, related to citrus plants, grows in the Land of Abundance, as the central Chinese province of Sichuan is traditionally called.

Pfeffersack & Soehne – The Spice Manufacturer

The Szechuan pepper is carefully selected by the Pfeffersack & Soehne spice manufacturer in Koblenz and sourced from its country of origin before ending up as whole, pure grains in the black ceramic jar. This preserves and protects the essential oils and aromas. You can finely crush the pepper in a mortar and pestle or chop it with a knife just before use and sprinkle it over food and dishes. For soups or stews, you can also place the whole peppercorns with other spices and herbs in a teabag and remove them whole at the end of the cooking time.
